The “PME Professional Diploma” course can only be delivered by exclusively certified and approved instructors.

Sweet Design Academy is a PME certified school.

This comprehensive course is divided into three modules: 

  • Sugar paste
  • Sugar Flowers
  • Royal Icing

Each module grants you a diploma corresponding to the specialty studied upon passing the evaluation.

When you successfully complete all three modules, you will receive the highly coveted Masters in Cake Design from the prestigious Knightsbridge PME School of London.

These courses are offered in French and English, following an intensive schedule of more than 25 hours each, over a total of two weeks.

Sugar Paste Module

The Sugar Paste module of the PME course will teach you all the cake decoration techniques using fondant:

  • Introduction to different types of fondant
  • Overview of essential tools
  • Using and creating colors
  • Perfect cake covering with fondant
  • Structure and assembly of tiered cakes
  • Assembly and smoothing of cakes with sharp edges
  • Geometric designs
  • Sugar ribbons, bows, and borders
  • Textile effects: draping, scalloping, stitching, ruffles, lace, embroidery, quilting, etc.
  • Fondant textures: wood effect, stone effect, etc.
  • Modeling and other toppers

Sugar Flowers Module

The Sugar Flowers module of the PME course will teach you how to create stunning, lifelike sugar flowers:

  • Introduction to different types of sugar flowers
  • Simple and wired flowers
  • Filler flowers: lily of the valley, orange blossom, and sakura (cherry blossom)
  • Roses, peonies, and orchids
    Gerbera, lilies, freesia, and carnations
  • Berries
  • Rose and ivy leaves
  • Creating floral arrangements
  • Decorating cake stands and cutting utensils

The Royal Icing module of the PME course will teach you the techniques for spectacular and precise decoration using royal icing and piping:

  • Using stencils

The program is very intensive. A minimum of experience in pastry or cake design is recommended.
